potluck: honey berry compote

Berry Compote (pictured here on sourdough pancakes)

Ingredients:

⁃1/2 cup of mixed berries

⁃1/2 cup of water

⁃1/2 TBSP sugar

⁃1 TBSP Potli Honey

Directions:

⁃In a small saucepan over high heat, bring the water to a boil before adding in the berries, sugar, and honey. There should be just enough water to entirely submerge the berries, so if not, feel free to adjust accordingly.

⁃Once the sugar has been reduced, reduce the heat to low, simmer for about 10-15 minutes, while stirring and muddling the fruit gently with a wooden spoon

⁃Once the berries release their juices and your compote has condensed to about half their consistency, remove from the heat.

⁃Let the compote cool for a few minutes before serving

⁃If you want to then make this into a mixed berry coulis, transfer the compote to a blender and blend until smooth. Strain the blended berry mixture and serve.
